Beer Can Chicken makes outdoor cooking fun -- and delicious

In Texas, they call it Borracho Chicken. In Arizona, they call it Beer Butt Chicken. In Louisiana, they call it Dancing Chicken. I just call it Delicious.

Regardless of where you are or what you call it, the results are the same: juicy and full of flavor! If you haven't introduced your family and friends to this delicious party feast, now is the time. It's virtually impossible to make a mistake. The chickens are juicy every time. Just follow these simple guidelines.

The secret to delicious beer can chicken is the liquid. You can select any flavor of your favorite canned soda, juice or beer. First, drink out 1/3 of the can. Leaving a full can result in boil-over, a big mess. Drinking out more than half may cause the can to collapse in on itself, potential for another messy disaster. Second, place the can in the grill holders, which prevents the can and chicken from tipping over and making a mess.

Cut away the tail and any excess fat from the chicken. Rub the outside of the bird with your favorite seasonings. A nice paprika-based seasoning will really brown the bird up while cooking. I love large chunks of ground spices; they add great texture to the look of the poultry as it cooks. The spices will also add flavor through the skin and gently penetrate into the meat. In fact, go ahead and drop a teaspoon of spice right into your can of beer.

Place the chicken over the can holder and place on the patio grill -- or on a lipped cookie sheet in the kitchen oven at 350 degrees. With the lid closed, grill on medium heat until internal temperature of the chicken reaches 170 degrees F (usually about an hour). Watch your friends' faces glow as they see you pull out these delicious chickens. And then listen to them rant and rave about the taste once they bite in.

Original Beer Can Chicken

Ingredients:
2 Large roasting chicken; thawed and trimmed
2 12 oz cans of beer
Camp Chef All-purpose seasoning or Paprika based seasoning, preferably without sugar

For a twist, give your chickens a hearty creole flavor with the Tony Chachere's Original Creole seasoning.

 

PREPARE BEER CAN HOLDERS:
1. Take your favorite canned beverage, pop the lid and pour out 1/3 of the liquid.
2. Set can, top up in the can holder.

PREPARE TURKEY AND CHICKENS:
1. Completely thaw your birds. Any frost will slow cooking time and consistency.
2. Trim excess fat from around the cavity opening of the bird and remove the tail.
3. Remove giblets from inside the bird and open a hole under the neck into the cavity. This will allow a vent for the moisture from the can.
4. Rinse your birds in clean cold water and pat dry with a paper towel. Season if desired with injection marinade and dry rub.
5. Place chickens over the open beverage cans.

COOKING:
1. Three 3-1/2 pound chickens will cook in approximately one and a half hours if you hold your temperature around 325°F. Follow manufacturers instructions for lighting your grill. Set temperature controls between low and medium. Poultry is considered done at 170°F.

CLEANING:
Wash the Beer Can Holder with warm water and soap. Rinse and dry thoroughly and store in a safe, dry place.
