• Completely thaw food before cooking.
• Marinading meat
by soaking for several hours in a refrigerator will break down the cellular structure,
this tenderizes the meat and decreases the cooking time. The same effect can
also be accomplished by injection marinading.
• Use tongs or a spatula instead of a fork when turning meat. Some natural
juices will be lost if meat is pierced.
• Use naturally lean meats and trim excess fat from steaks, and remove
skin from poultry. |

Ingredients:
1 lb. lean ground turkey (or beef)
8 oz. can crushed pineapple, well drained
1 egg
1 tsp. salt, dash pepper
1/2 tsp. ground nutmeg
4 to 6 buns
honey butter (optional)
How to Prepare:
Place the meat, egg, pineapple and seasonings in a zip-top freezer bag and squeeze
until everything is well mixed. Form 4 to six patties. Fry 20 minutes over
medium flame in a lightly sprayed, covered skillet, turning halfway through
to brown on both sides. Serve in buns spread with honey butter. Complete the
meal with ambrosia fruit salad (citrus sections and coconut). |
