Break out the black pots and plan to cook up an Easter feast that  your family is sure to remember. First, select your choice of meat  for the annual meal. A traditional ham with pineapple glaze is the  perfect start. Baking the ham in a cast iron oven (such as the CP-12)  will help hold in the juices. Coat the ham with brown sugar for a  great glaze.

If you prefer turkey, the Turkey Cannon will ensure a tasty Easter  meal. Prepare the turkey in the grill or kitchen oven (use a cookie  tray to catch the juices for gravy in the oven). The results are  always amazing. Turkey is a healthy way to cook, ensuring your guests  will leave feeling heart-happy.

Or, maybe you will go traditional and break out the lamb roast.  Simply sear the outside of the roast in the Dutch oven with some  garlic and onions, then place it in the oven, coated with a can of  mushroom soup and a cup of pale beer. Roasting at a low heat, you'll  tenderize the meat and fill it with rich flavors. Toss in some cubed  potatoes and carrots for the last hour of roasting.

So this year, when the Easter bunny visits your house, may the spirit  of Spring bring you a festive day filled with great smells and  satisfied mouths -- the things holiday memories are made of.

4-21-2006 The Bridgerland Outdoor Coalition hosts its second annual Outdoor  Expo at the Stan Laub Center on the campus of USU in Logan, Utah on  April 21-22. With booths, activities and events, this is the most  education-centric expo in the West! A wildlife conservation banquet  to be held on Thursday night will raise funds to help local nonprofit  groups promote wildlife habitat in the region.

Pineapple honey-glazed ham   Rating

Ingredients:

ham roast
1 can sliced pineapple
1 C. brown sugar
1/2 C. honey
1 lrg. onion
2 cloves garlic
3 C. white cranberry juice

How to Prepare:

In the base of a 12" Dutch oven, place the trivet from the Ultimate Turkey Roaster. Set a standard ham roast or pre-sliced ham roast (I like how the flavors easily absorb deep into the sliced hams) onto the trivet. Pour pineapple juice and rings over the roast, placing the rings scattered across the ham. Crumble the brown sugar over the ham. Quarter the onion and place around base of ham roast in Dutch oven. Toss in garlic gloves, halved. Pour in enough cranberry juice to reach the top of the trivet (add more juice/water during the cooking process to maintain liquid level).

Place over Camp Chef stove and cook on medium heat for 30-40 minutes, completely reheating the ham roast and infusing the flavors deep into the roast. After cooking for 15 minutes, remove lid and pour honey over entire ham.

Baste or brush regularly with sauces in base of pan.
