Start new traditions this summer -- filled with great times with your family and friends.

Close your eyes for a minute (well, after you read this, of course) and imagine the view from the crest of your favorite mountain ridge. The trees ebb into the valley below with a border of brush before wide fields open up, filled with streams and all that makes this such a beautiful world. This is certainly not the view from your 14th floor office building. Isn't it time to escape?

This summer, make a resolution to take the family outdoors. Whether that means a host of backyard parties or a trip high into the mountains, experience the heart of our land firsthand -- smelling the fresh wildflowers, watching birds nested in the trees or listening to the rustle of the wind.

Why not try some new adventures with your family? Rock climbing or hiking in a new area, canoeing along a new river, mountain biking on a different trail. Everyone is sure to have a great time -- spent together -- building memories that are sure to last a lifetime.

And, of course, don't forget the nutrition. A hearty meal at the campsite can fill your body with the energy you'll need for a great day in the great outdoors. Make your evening's campfire even more enjoyable with a delicious dessert treat like a s'more off the roasting stick or a fruit pie from a cast iron pie iron.

Braised Pork Ribs with Spam-Pineapple Fried Rice   Rating

Ingredients:

2 whole slabs pork baby back ribs
1/2 t. rubbed thyme

Dry Rub:

8 T. light brown sugar, packed
1/2 t. onion powder
3 T. kosher salt
1 t. chili powder
1/2 t. ground white pepper
1/2 t. cayenne pepper
1/2 t. ground mustard

Braising Liquid:

1 cup white wine
2 T. white wine vinegar
2 T. worcestershire sauce
1 T. honey
2 cloves garlic, chopped

How to Prepare:

In a bowl, combine all dry ingredients and mix well. Sprinkle each side generously with the dry rub. Pat the dry rub into the meat. Refrigerate the ribs for a minimum of 1 hour. Combine all ingredients for the braising liquid in the cooking oven and heat for 10 minutes. Add the ribs to the pot. Braise the ribs for 2 1/2 hours. Transfer the braising liquid into a smaller pot. Bring the liquid to a simmer and reduce by half or until a thick syrup consistency. Brush the glaze onto the ribs. Return the ribs to the cooking pot and broil just until the glaze caramelizes lightly. Slice each slab into 2 rib bone portions. Place the remaining hot glaze into a bowl with the ribs and toss.

Rice Ingredients:

6 scallions, sliced, white & green separated
2 cups spam, 1/4inch dice
2 cups white pineapple, 1/4inch dice
4 cups cooked long grain rice
salt & pepper, to taste
canola oil, to cook

How to Prepare:

In a 12inch pot, coat lightly with oil and saute the scallion whites and add the spam and pineapple. Add the rice and season.
